There are plenty of reasons to linger over dinner by the sea in Hua Hin. This September, Big Fish & Bar at Hua Hin Marriott Resort & Spa is adding another: giant trevally, served four ways and with flavours that travel from southern Thailand to Indonesia and the Mediterranean.
A powerful reef fish found throughout the warm tropical waters of Southeast Asia, giant trevally can grow to an impressive 80kg. In the kitchen, however, it is the fish’s firm, succulent flesh and rich flavour that matter. Throughout September, the beachfront restaurant is putting sustainably sourced giant trevally at the centre of four limited-edition dishes.

The Thai side of the menu begins in the south. Southern Yellow Curry with Giant Trevally pairs the fish with young coconut shoots, coconut milk and kaffir lime, with jasmine rice to soak up the fragrant curry. For something smokier, Charcoal-Grilled Giant Trevally arrives with Thai eggplants stuffed with pork and prawns, nam prik kha — a punchy northern Thai chilli-and-galangal paste — lime leaves and chilli oil.
The kitchen then heads across Southeast Asia with Ikan Goreng Kecap, an Indonesian-inspired preparation of bone-in trevally fried until crisp and dressed with ginger, garlic and sweet soy sauce. Jasmine rice keeps things reassuringly simple on the side.
The final dish looks west to the Mediterranean. Pan-Fried Giant Trevally comes with cherry tomato sauce, capers, Cailletier olives and new potatoes, finished with pistou, Provence’s fresh, garlicky herb sauce. It is perhaps the lightest expression of the four — and one particularly suited to a warm evening beside the Gulf of Thailand.
