For one night this September, Akira Back Bangkok is turning its attention from Asia towards the vineyards of Tuscany, pairing its signature Asian-influenced cooking with Italian wines high above the Bangkok skyline.
The restaurant, on the top floor of Bangkok Marriott Marquis Queen’s Park, will host “Journey Through Tuscany” on September 20, a five-course wine dinner featuring bottles from Villa Saletta, a historic Tuscan estate whose origins can be traced to 980 AD.
The evening begins at sunset with a glass of Borgo Imperiale Prosecco Brut before moving into a menu that reflects Akira Back’s familiar mix of Japanese and Korean flavours.

A Tranquil Retreat by Songkhla Lake
On the shores of Songkhla Lake in southern Thailand, Pak Pra Village wakes to a landscape shaped by water. Giant wooden lift nets rise above the lake like skeletal sculptures, silhouetted against the morning sky as local fishers continue a way of life passed down through generations. Surrounded by wetlands, fishing communities and wide horizons, this quiet corner of Phatthalung offers a glimpse of southern Thailand at its most peaceful and elemental.

Tuna tataki opens the dinner, served with mustard su-miso and pickled wasabi and paired with Langhe Nescetta from Diego Conterno in Monforte d’Alba. Next comes a combination of two Akira Back favourites: AB Taco and Una-Q, bringing together wagyu bulgogi, unagi kabayaki and seared foie gras. The pairing is Villa Saletta’s Chiave di Saletta IGT Toscana, a red characterised by berry, balsamic and dark chocolate notes.
Roasted black cod follows, accompanied by sautéed baby spinach and gochujang miso. Its sweet, savoury richness is matched with Saletta Riccardi IGT Rosso Toscana, a full-bodied red with notes of cocoa, coffee and black pepper.
For the main course, Australian wagyu ribeye arrives with mixed mushrooms, potato purée and black garlic jus, alongside Saletta IGT Rosso Toscana, a fruit-forward, spicy red from the estate.
Dessert shifts to something lighter: strawberry panna cotta with crumble and raspberry glass.
Villa Saletta lies in the Tuscan countryside and has a documented history stretching back more than 1,000 years. Today, the estate covers more than 3,300 acres, combining its long agricultural heritage with a modern winery producing a range of Tuscan wines.
